What’s “Wet Hulling”?

Wet hulling, aka “Semi-Washed processing” (半水洗), is a version of PN processing, usually used in Sumatra

removes the outer skin → spread on large tables to dry (1 days) → rinsed and washed → partially dry → hull to remove the parchment → dry

 

Beans of wet hulling processing are only be dried for about 1 day. Then, the beans are washed and partially dried again. Next, the beans will be hulled to remove the parchment before they finish drying.

 

Feature of wet hulling coffee (e.g Sumatra)

Wet hulling processing, 即Semi-washed (半水洗) 的豆在喝起來果酸味水洗豆低, 但比日晒豆酸一點; 甜味PN法 (半日晒)低, 但乾淨度PN法 (半日晒)
