Leveling is not conducted probably, density of coffee powder will not be balanced within filter basket, which could cause “channeling” effect.
Flush the group head before the portafilter is mounted have 2 reasons:
1. Clean the machine
2. Stabilize the temp of machine
After the portafilter is mounted, extract should be started a.s.a.p as the group head is heated and it could cause chemical reaction of coffee powder.
Milk steaming – Organic substances in milk cause tension force, so the milk foam may remain a period of time once its form.
